When you say your connection is at full strength, it sounds like you're using a wireless connection. If that's true, have you tried switching to a wire to see if there's a difference? Each game is different. Madden has 2 full teams of players to render when UFC has 2 fighters. There's a lot more data going back and forth so that's going to take a more stable connection that wireless just doesn't really offer.
It's a wired connection and I'm not even attempting to play madden vs someone else online. Just simply playing franchise mode through the online option.

Have you tried any troubleshooting yet? If so, what have you done?

Reset the entire internet for the house, shut down the system for a good half hour and restarted. Uninstaller and reinstalled the game. It still happens at all sorts of random times. It's 100% an issue with the EA servers.

We're not getting a lot of reports of this so we're not aware of any connection issues currently. Something else to try is clearing the alternate MAC address with these steps:
Go to your Xbox Settings
Go to "Network", then "Advanced Network Settings"
Click on "Alternate MAC Address", and then click "Clear"Also, check to see if your router supports QoS (Quality of Service). If it does, enable this and prioritize your console.
You should also verify that your ethernet cables are at least Cat 6 and are free of any damage.
