I have one question... Why wasn't there a option with different story arcs to play the Alien Pathfinders. that would have opened a whole new world in the game

No reason they have to be human I guess - but they are wanting you to connect with the character you play as and that would take a bit of work to do that quickly with an alien. It would be doable though and perhaps they have plans for you to play as something other than human in some future DLC or game set in Andromeda. They have said they want to explore both the galaxy and the possibilities in Andromeda.
I wonder if they envision jumping characters between games and having ones set of decisions effect the next guys. While an interesting idea, I'm not sure how it would feel as accomplishment and payoff - especially if the characters aren't somehow connected. To make them different, I'm not sure what they'd do. There's only so many different flavors of character I'd want to play (even if they all were pathfinders I wouldn't want to be the alcoholic pathfinder, or the cowardly pathfinder). Roleplaying the green and apologetic pathfinder was pushing the limit for me as it is.
I guess in line with the previous Mass Effect franchise, it's a game where you play someone else(shepard/ryder) and it's a story written specifically for a character. it's not like a game with a generic kill the demon lord storyline where it fits any character and you can select your species during character creation (Play Elves +1 to dex -1 to con). For us to play eg an asari pathfinder, they will have to rewrite the entire storyboard, it's like creating an entire new ME game, if they limit it to just Asari and you cant play human pathfinder, you will have another group of fans asking why not.

To bring up the Dragon Age franchise, in games 1 and 3 you were the Grey Warden and the Inquistor but in DAII you were Hawke. You had to deal with Hawke's family and history, and changing Hawke's race would have had huge effects on the story and history.
On the other hand the Grey Warden and the Inquisitor were relatively blank slates. Sure House Auducan, House Trevelyan and so on had their own backstories and some impact on the overall story, but I'd say it was less of a focus than it was with Hawke.
Back to ME, Shepard is the Human Spectre, and Ryder is the Human Pathfinder, and their status as human is a factor in the story.
I agree that I'd love to see a Mass Effect game/expansion where you get to choose your race (Elcor plz) and/or view humanity through the other races' eyes.
