I had a similar problem where my Shepard imported from ME1 had his dark, salt-and-pepper beard morph into a pure silver beard that didn't match his hair. It looked bad. Importing the same character into ME3 reverted it to the way it looked in ME1. I can only surmise that they changed the character models/creator in ME1 to match ME3, but left ME2 alone. Which means that ME2 has a bit worse looking character models than either 1 or 3, and certain features don't quite translate properly on import. It does seem a bit lazy, if t hat's the case. ME2 is a pretty old game and all 3 should obviously be using identical models and graphical features for Shepard.
