The only way wold be the Origin cloud save function, but that would have prompted you at the very first Game start.

A LTSB will run into this problems sooner or later. It is meant as a mission critical OS with minimum updates, all the multimedia stuff is not brought to the state of the art.
The standard save folder is "Documents\Bioware\Mass Effect Legendary Edition\Saves\ME1".
Did you updated to a newer version of the LTSB or did you opted in to a standard edition?
Afaik a LTSB is not updatable, so I guess you practically preformed a fresh install of the OS and if that is the case and your Documents folder was on the OS partition it would be gone.
