You can delete the save files without breaking the game.
The "GamerProfile" file is also in the save folder, but if you want a fresh start there is nothing in that file that is important.
You could still just back up the "GamerProfile" and the old save games.
The standard save location is "C:\Users\>your user name<\Documents\BioWare\Mass Effect Legendary Edition\Save\ME2"
