Both on n7 hq and in game but also it’s saying I’ve actually completed a challenge even though I know I haven’t finished it as well
The only "dylan881" I see in N7HQ is listed as on PC and N7=1 with no MP play yet.
Playing on a different account? (assuming you only have 1 account)

The only Masteries you've completed are Squad Elite, and AR Mastery.
FYI, Squad Elite is the only one that doesn't reset when "completed" (well, that and "Mass Effect"). Every other one does. For AR Mastery it is completed when you achieve 9 of the group's AR challenges. Which are all listed as completed once in your N7HQ. Once you completed AR Mastery, those 9 got reset. That includes the M-7 Lancer (is that the "M 7 gun" you referred to in OP?). This allows you to get the Mastery multiple times. That's how it's supposed to work.
If that is indeed what you are seeing, all is normal.

Here’s the thing I know I didn’t play it on the first run for instance there are several guns that I have not even got in the multiplayer in Vittori and yet it’s still marked as complete it’s the same with the Squad I have an even completed gold extraction or even platinum extraction and and it’s still listed as complete

That's a little hard to parse.
Looking at your Squad Elite, it has 16 gold extractions, 5 Platinum extractions. Are you saying that you don't have even that many?
You actually haven't done any?
Or that you actually did complete (25 each) and it isn't showing that?
And I don't see which gun has challenge listed as complete (or even that has any points) that isn't already in your inventory. Or is your inventory wrong?
Do you have a specific example?

Okay. Just focusing on the AR's: you don't have the Spitfire, Saber, Typhoon.
Here's a snip of your AR Mastery challenges including those weapons (attached).
The Spitfire, Saber and Typhoon show "times completed: 0" and "Current progress: 0/140,000". So, totally consistent. They haven't been used.
To complete AR Mastery, you don't need to complete ALL of the AR weapon challenges, just 9 of them. Which it says you did:
Avenger, Phaeston, Mattock, Revenant, Geth Pulse Rifle, Harrier, AR Medals (100 medals), Argus, Lancer.
All of those list "times completed: 1". When you reached the 9 completed, they all reset their "current progress" to 0. The ones that weren't yet completed keep their progress.
I checked the other weapons you don't have (Talon, Wraith, CSMG), and they all show 0 progress, 0 completions. So, not used.
This is totally how it is supposed to work.

The thing is with the M7 Lancer i’ve got that one twice but it only says number of times complete it once And also the current challenge points for that gun is approximately 60,347 out of 140,000 points it’s currently use a percentage in 43% And plus I didn’t know that they actually reset the challenges Points to 0

On N7HQ, check your "Overview" (home) page. Recent Challenge Completions. You'll see "M-7 Lance Use" twice. That is because the second one is in the Reckoning Mastery:
Challenges > Aliens > Reckoning Mastery
Some (far from all) challenges appear in two places. For the weapons that do, generally it is 140k for the standard Weapon Mastery one, and 200k for the secondary one in the Aliens group. This also can be repeated, after you finish completing Reckoning Mastery (which then resets completed sub-challenges). This is essentially how they all work.
I hope this allays all your fears. Your account is working as it should. Spend some time perusing your N7HQ and with time and play, you'll figure it all out. It's also fun to track stuff in N7HQ, and manage how to maximize your Challenge Pts, if so inclined.
