@SofaJockeyUKGot this to unlock at last but I did have to re-do a little bit. So, for whatever reason, even though Insanity and Paramour originally registered during my ME1 playthrough, reloading the cutscenes and final mission in ME2 wasn't getting those achievements to pop.
What worked for me was going back to my ME1 save and going through the Mu Relay again for the LI cutscene, and then also reloading the save I conveniently made right before the final fight with Saren and finishing that fight again on Insanity. It was like for whatever reason, for Paramour and Insanity it tracked my progress on ME1, but it didn't track that progress properly against Paramour II and Insanity II until the update, then when it was tracking properly it thought I'd only done ME2.
I wondering if because i beat ME1 before the main update (unfortunately no good placed saves) if i speed-run the game it might give me Paramore3 after the MU-cutscene and romance etc, despite having been given Paramore1 first time around, the update may of forgotten this for me. As i dont want to redo all 3 games AGAIN for 1 achievement, but I am a perfectionist.

I'm still halfway through my first play through of Mass Effect 3 but as of now I've unlocked all three Paramour achievements easily.
