I would like to see either a Turian or Krogan.
But I think any of the primary races should be looked at, Asari, Turian, Krogan, Geth, Human, or Quarian.
I can see where this would provide a challenge to the creation of a new game though, with so many different races to choose from it would effect the starting plot of the game as well as how your character is viewed by the rest of the galaxy. I mean for the most part Humans are the newest race to the galaxy so to speak...at least the youngest of them. I had hoped they would have added race selection in this one but I can see why they didn't. But that being said I think it is something they should really look at for the next Mass Effect.
