@FflewFflam  Sorry for the late response.  It's strange that rebinding the keys wouldn't help, but perhaps something else is interfering.  I'm referencing ME1 for this, but the principle applies to all three games.  Please try binding the Use/Sprint interaction to a key you wouldn't normally use for anything, for example the = or comma key, maybe right-shift, whatever is totally free.  If you can't interact with an item or another character, go back to the key bindings settings and make sure the change you made stuck, and if it did, bind Use/Sprint to something else and try again.

If that doesn't make a difference, please test in fullscreen, borderless, and windowed modes, and let me know whether you can interact in any of those.

If this still doesn't help, try again, but this time in a clean boot.  I know you did it before, but maybe not in combination with shutting down other tasks and switching the key bindings.

Go through the Task Manager's background processes list and shut down anything that doesn't absolutely need to be running, for example MSI Afterburner or capture software.  Don't open anything else aside from the MELE and Origin.  Here again, make sure the key binding you saved in the previous session is still showing, and try a few different keys if the first doesn't work.  You don't need to change everything; just stick to Use/Sprint for ME1 or the equivalents for ME2 and 3.

@puzzlezaddict OMFG what did you do??? IT WORKS!! (caps on purpose btw). I don't know how you did it, I don't know anything but you did it. You are a true Hero indeed!!! I'm off to tell EA that they should hire you cause all they told me was "oh, it's considered a bug, one day a developer will look into it, you won't know but they'll find a solution. ... One day".
So, now, do I enable all I disabled? Do I leave them disabled? I noticed one thing: my Intel Graphics was disabled. I enabled it. Would that have anything to do with anything?
In any case, I bow deeply to you puzzlezaddict, you are a wizard, a genius and my hero!! :D Thank you, thank you, and thank you.
I'll just wait for you to tell me about enabling or not what I disabled!
    You're the best.

@FflewFflam  I mean, I didn't do anything.  You did all the work; I just threw out a couple suggestions.  I'm glad something worked though.

At this point, the next step is to enable some services, but not all, and see whether the problem returns.  If it doesn't, enable a few more; if it does, disable some of the ones you just enabled.  You can go in batches or use the 50/50 method, but either way, the point is to progressively narrow down the list until you find the cause.

If and when you do find the problem, please let us know so we can suggest it to the next person who reports the same issue.

@puzzlezaddict You definitely helped me step by step.
Listen I enabled everything I had disabled, one after another, checking each time that there was no problem. And there was none.
Looking back, I wonder if I did the CCleaner correctly the first time, I'm not really sure. I've done that so often, you end up doing it automatically, without really checking.
Or maybe it worked because of the key binding: you said this and I followed to the letter "Please try binding the Use/Sprint interaction to a key you wouldn't normally use for anything, for example the =". Plus, I made sure the binding was done for only one interaction: use/sprint is = but nothing else is and so on and so forth for all the others.
Or maybe there was a software conflict and doing all the steps you suggested and finishing with the CCleaner did the deed.
I'm sorry I can't be clearer. I hope anyone who has this problem will follow your suggestions and will come to the same conclusion as I did.
