I agree it would be nice. There's a slight problem with doing it like ME1. With the addition of new weapon types plus heavy weapons, I don't think that the UI can support every one of them. Unless I've counted wrong, one has to be omitted from the list, or the last one in the list (heavy weapons) won't be accessible.
In my own edits, I've given more weapons to the classes, but I had to pick and choose which one to omit from each class based on my interpretation of what each class should be able to do. Bioware probably didn't want to deal with the controversy of whichever choice they made. At least that's my assumption -- might be wrong.

You do get the option to add a weapon class to your character at a midpoint mission, or you can unlock a bonus weapon instead. So you can have the Assault Rifle, shotguns or Sniper Rifles added to an Adept class, or you can as an Infiltrator get the Black Widow sniper rifle or another weapons class as an either or proposition. Not completely what you asked for, but it will give you further options in the game later. It does not stack in NG+ though, you simply get ONE chance on your first play to make a choice, and subsequent plays this is bypassed and you don't get another.
- @mcsupersport Yeah, but that's been always the case, I mean no restrictions from the beginning
