Forza (except the Horizon series) and Gran Turismo are mainly simulation racing while NFS is mainly arcade racing.
Two different driving physics between simulation and arcade racing.
Some people may argue that Gran Turismo is simcade racing though, but it would still have different car physics than pure arcade racing.

Gameplay and game modes are a lot more important when you can do something with your car after you finish applying upgrades onto your car.
If there is a lack of gameplay and game modes, then you wouldn't have much to do with your cars except showing off your cars to others.
And IMO, that's boring.
I want to be driving my fancy-looking cars, not sit idle with my fancy-looking cars.
