Yeah that's an issue that has never been solved. Same thing happened to me. Lost about 200 hours of progress unlocking cars, 50 million online and 10 million single player cash lost.
I back up my Save Game folder and all its files three times a week or more now. I don't actually know if that would even help because I haven't tried to restore a back up game save for Unbound yet. Some times if you try to start with a different save it compares info online and doesn't match so might not work. Not saying this is how Unbound works but worth mentioning. No guaranties ☹️
