I don't understand with all the technology with face scans/ AI etc why aren't all the starting goalies (at least) masks accurate? Is there a copy right issue with including them in the game? I've seen players faces equipment tattoos in other games but for some reason they can't get this done?

This would be good add. When we create skaters and when we choose a face protector for the player, which is "full cage", "half cage" or "hybrid shield", we can change the cage color and in addition we can choose metallic finish if we want.
If we can change the cage color when we create skaters, it can't be impossible to get this feature to the goalie creation.
I think that we not need separately Bauer CHL masks and basic goalie mask in the "standard mask" collection. When we create skaters we can choose which face protector we want, This would be also good to the goalie masks, that we could choose which cage we want to goalie mask.
I mean, we can already use all NHL logo's in team creation. We can even alter them by changing their colors so I don't know why creating a mask with an NHL logo on it would be breaking any agreement.
Because you dont have written permission, as an individual to use their logos. EA has an agreement. This is where the conflict lies. In order for you as an individual to create a mask using an NHL logo. EA would have to adopt that permission in their contract with the NHLPA. And its highly unlikely that, that will take place. Masks are in a different realm than team equipment. Sweaters, socks etc. Masks are personal property of NHL goalies, and are created by the player and designer. Permission for use of those lie with the aforementioned. If you were to go to a sports shop dealing in mask design, and asked to have a mask made like Montembault for example. He would be unable to do it. It is copy righted.
