Hi All:
My strategy was as follows (it's been a while, so my memory may be a bit rusty here):
Play as a Vampire Sunflower, with speed upgrade, vampiric drain upgrade, and reload upgrade.
Plant a few ranged pots around the area, but keeping about three empty (more on this later).
Summon the enemy and take out the ranged minions as quickly as possible.
Most of your movement will be backing away from the enemy so you can keep firing at them.
Like infinity time, you do not want to face the boss head-on. Play a cowards game of kiting the boss and minions around the area, slowly wearing them down.
If your health starts to get too low, then:
Back away towards an empty pot, and plant a heal flower there, then heal beam it to keep it healthy while it keeps you healthy.
When the boss/minions close in on you, run away as fast as possible (try zig/zagging to throw off any remaining ranged weapons).
When you are far enough away rinse and repeat the kiting strategy described above.
Since you are playing as a vampire flower, each HIT gives you health. Hence the fire while backup up suggestion. Only use the heal pots when you really need a bump in health and, as described above, don't get boxed in by a swarm of enemies.
