In my experience the best team comp of the yeti king is two sunflowers, vampire and/or stuffy, and two good players on either pea or corn. I found the splash damage variants a help due to the insanity. Default pea worked well for me, likewise commando corn. Toxic citron might work well but his DPS is not so great and he's lousy for the popsicles.

I should have clarified this so that's my fault, but Toxic Citron Isn't for putting out damage he is more for defending Toxic Pea while he shoots the Popsicles. As a last resort Toxic Citron CAN attack the Popsicles BUT it isn't recommended. That's why I recommend two Vampire Flowers to make up for the damage lost from Toxic Citron. Because Vampire Flowers put out a lot of DPS and they are very accurate this is how I recommend using the characters during the Bait phase and Popsicle phase:
Bait Phase: all four players should go to the roof of the cabin located right next to the bait position (sunflowers should use there heal flowers to give them a boost to the top of the cabin) Citron can use his peel sheild to protect the other players, and he can use EMPeach to slow down Bosses and hordes of zombies. While Peashooter can use his Gatling mode and chili bean bomb to destroy zombies.
Popsicle Phase: Toxic Citron and Toxic Pea retreat to the roof of the bridge near the bait location, from here the Toxic Pea can shoot most of the popsicles on the map, while Toxic Citron defends Toxic Pea from the incoming enemies. The sunflowers during this phase wander around the map shooting the popsicles peashooter cant reach (make sure that both sunflowers have there heal beam on each other AT ALL TIMES avoid as much a possible going into the trench)
Abilities:
Toxic Citron: all default
Toxic Pea: all default except Chili Bean can be switched for Sombrero Bean. He can also switch Gatling for Retro Gatling for increased accuracy while shooting the popsicles from far away but at the same time losing DPS
Vampire Flower(s): can use any ability BUT avoid using Dark Flower (Heal Flower and Rainbow Flower are fine, Rainbow Flower is recommended for at least one sunflower because it constantly heals, thawing any players to pick up its sundrops)

By the way there is a video of germanshu playing topic citron in this boss hunt from the first time it came around. Good strategies for team placement. This is the one hunt I haven't finished on crazy yet.

I still haven't managed to beat the Yeti on crazy because something always went wrong. The best game i had we got him down to literally zero health, with only little HP left that is not even worth a bar.
But i can tell you a couple things and hopefully upload a video of me beating it on crazy.
First of all Toxic Citron is great with his splash and to keep the team safe during the rush phase. But he is useless when it comes to destroy the popsicles. Paired with a flower they should be able to destroy that one under the bridge though.
Next thing is the Vampire Flower. Don't use it. Her perk is useless against freeze and her HP is too low.
Stuffy flower is the way to go, as her rainbow bursts spawn stars that nullify freeze.
And finally: go for splash. One character needs to secure the area while the others focus on the Yeti. If not, the team gets surrounded and overrun from behind.
And this is a no-brainer for experienced players but: never use any Chomper. Ever. Period.
