It depends on your playstyle. Here are my recommendations:
If you fancy yourself an aggressive player and like to get in firefights and swap bullets, the Peashooter and Footsoldier are the easiest to pick up and play. Their abilities are all straightforward and don't require much skill to learn, such as an exploding chili bean and a smokescreen.
If you fancy yourself a Sniper, then get some practice in with Captain Deadbeard and the Cactus. They have weapons that automatically charge for increased damage when aiming down the sights, and they can do an extremely high amount of damage when fully charged, killing most targets in 1-2 hits. They're not the best in single player game modes, but they're both fantastic characters in PVP, especially if you start learning their little tricks.
And lastly, if you fancy yourself a player who would support your teammates instead of leading them into battle, try the Scientist or the Sunflower. The Sunflower is a healer who is very easy to pick up and play, though the Scientist can be tricky and take some time to get used to.
There are plenty of other roles you can fill, but those are the easiest characters to pick up, based on your playstyle, and which game mode you want to play.
