What are some good flight sticks?

It really depends what you are looking for.

If you want a basic, no frills but decent stick (rather than HOTAS), start with the Logitech Extreem 3D.  This has more than enough buttons to control most functions, a 4way hat, integrated throttle, and a twist handle for yaw.  It's the all-in-one solution.

If you are looking to spend a little more and want a little more control and immersion (without breaking the bank), you want to look at the Thrustmaster T.Flight One.  This is your best entry level HOTAS.  Equal features to the above, but with a "separate" throttle for the HOTAS experience.  (*note - not truly separate as joined by same cable and single power source - cable can be annoying, best to use as one unit on your lap/desk).  This solution  is also the best out-of-the-box solution as it is requires no additional software or programming.  It is completely plug-and-play and works for PS4 and XBox one as well.

If you want to get serious into sticks and/or sims, look again to Logitech with the x52 pro, or the x56.   Both are great mid-range sticks.  I personally use the x56 at the moment.  More than 180 programmable functions, hall effect sensor for accurate stick tracking, dual thruster control for multi-engine aircraft, twist to yaw, multiple hats and thumb sticks.  And the option to run any other stick with the throttle allows for great flexibility and upgrade options.  But this is a decidedly more costly option that the previous choices.  Requires external software.  Make sure to get your stick model after 2018 as the previous Saitek manufacturer had poor quality control.  After 2018, sticks are great.  (Thrustmaster 1600 throttle/stick combination is also a good midrange setup but less buttons and to me feels a little cheaper).

After this we get into high end solutions.  Thrustmaster Warthog/Virpil/VKB.  These are your market beaters.  You can spend almost as much on a stick for these alone as you can the thottle/stick combo of the x56.  These are the best of the best in terms of build quality with Virpil being my preferred option, but the Warthog being the most cockpit accurate (it is a replica A-10 stick and has f-16 and F/A-18 options).  Be warned, most of these choices don't have twist to yaw so you require foot pedals as well so you can be talking in the $1000 territory for the stick/throttle/pedal depending on your currency.
