Quick update: From what I've been able to discern, it is likely something to do with the EA app losing connectivity with the internet when the achievements were/should have been unlocked. Of course I can't confirm this but I do recall some kind of error from the EA app at the time of launching not that I can recall what it was as it wasn't important 'at t he time'.
Additional troubleshooting:
-Cleared EA App cache through the app recovery option
-attempted loading the game directly through the app (not steam initially)
