This usually means that there's another program active in the background that constantly wants to take the fullscreen. Maybe you can check if every unnecessary program is fully closed before playing the game, to see if that fixes it?

I've also started getting this problem the last few days, & nothing has changed in my system config. I think there might be some kind of issue with the game here.
That said, I was able to stop this from happening by switching the game to Windowed Fullscreen rather than Fullscreen so @mad_marynate you could try that & see if it fixes.
