It unfortunately appears that the game does not support a 16x10 aspect ratio.

Summarize your bug My monitor is 1900x1200 and this is the resolution my Windows 10 is set to. However when I set Jedi Survivor to 1900x1200 and enter a meditation point, the edges of the display are clipped. The only way to fix the issue is to set my in game resolution to 1900x1080 It's almost as if Jedi Survivor thinks my monitor/display is only 1900x1020 and is ignoring the 1900x1200 capability.
How often does the bug occur? Every time (100%)
Steps: How can we find the bug ourselves? Get a 1900x1200 monitor and set Windows to 1900x1200. Launch JS and set resolution to 1900x1200. Enter a meditation point and observe the clipping in all of its glory. Then set in game resolution to 1900x1080 and observe the clipping disappear

What do you expect to see? 1900x1200 in game resolution with no clipping.

Extra detail: To eliminate the clipping, I have to use 1900x1080 in fullscreen mode. If I use 1900x1080 in windowed full screen mode, the clipping returns.
