Story mode
I like playing in ( Story Mode SWS Journey + ) on the PC but after the last update - The characters I am fighting kill me in 2 hits - it was working fine before the update 9/06/2023

Yeah, that sounds about right for Journey +, particularly if you are using the Warrior and Purity perks.
Don't forget to also check your experience level via in-game settings. If you're set on Jedi Grand Master, you're crusin' for a bruisin'.
