if you made gfx setting changes i would find the file called client_setting.ini which is normally found in the appdata folders in windows and delete that file, it has the settings for video gfx saved ingame
unfortunately i do not know mac or game running under wine
i found mention that the main files are installed at ~/Library/Application\ Support/com.broadsword.swtor/Star Wars - The Old Republic/game
