2 options as this looks like a 4k screen
Lower the resolution on the MAC to something like 1920 x 1080 or 2560 x 1440 before playing
otherwise you can enlarge the UI ingame , cant do anything for the launcher
The UI size can be increased further then the in-game scaler allows (1.25) but needs to be done for each UI profile used
•Press the [Windows] Key + [R] at the same time. •Copy the following in to the text box and press ok: %localappdata%\swtor\swtor\settings
Go to the folder called GUIProfiles , these are your UI settings for each character .
Now in these you will find a section like below, now this says global scale is set to 1.1 , set this to say 1.500000

Hi! No, not a 4k display, just a 2014 MacBook Retina. That is currently my fix, increasing the UI, however the text remains small and the cursor is still tiny- the cursor being so small means that It's hard to select enemies quickly and it's less easy to be precise.
Thank you to everyone who has had suggestions! However, I'm still struggling :/ Any more thoughts?

if just lowering resolution ingame does not help then try one of the scaled resolutions like listed at this link and match ingame

hello im having the same issue, on PC, 1080p normal screen, but tiny undreadable UI. i tried changing the resolution but the UI stays extremely small its unplayable. lowering resolution ingame does not help. neither the pc's resolution settings which are fine. thnaks anyway have a nice day

try creating a monitor override using cru - https://www.monitortests.com/forum/Thread-Custom-Resolution-Utility-CRU
just select your deafult resolution of 1920 x 1080 and see if that resolves the issue
otherwise if this monitor is connected by a HDMI cable , if you have the ability to use like DVI it is worth trying too
