Basically you're complaining because you couldn't defeat a toon. There are a dozens of options to take care of zDooku, I honestly didn't even know it was a problem for anyone. Seems like a poor zeta.
Zylo or Zavage are much worse 3v1's, but nothing is unbeatable.
