Can i get Han to 7 stars?
I spend around 100 crystals a day for energy refreshes for him. By the time JTR comes back do you think I can get him to seven stars? I’ve gotten everyone else there.

You have 10 days until Jan and she's not on the Dec calander so you're probably ok. If they start it Jan 1st you'd have 17 days before it ends. If you keep up the rate you're at you would be easily able to panic farm the rest in that week if needed.
If it were me, I'd probably do the 3 refreshes and be done in 11 days just so you don't have to worry about it anymore.
