You seem to have missed the point, once they change sides, they no longer have the opposite tag. So now that Kallus is Rebel, his tags will be "Light Side" "Rebel" "His Role".
You even said it yourself, Wedge was once part of the Empire, do you see him having the Empire tag in the game? The tag that is used for the character is the latest they have in canon.
