Difference between crit damage vs crit chance?

What's the difference between crit chance and crit damage? I see lots of crit chance on wedge, etc, but actually crit damage would seem more valuable but I know there is an actual difference but what ...

I always put a crit damage set (+30% crit damage) and a crit chance set (+5% crit chance) on attackers. One increases the chance a critical strike occurs, the other increases the damage a critical strike does.
