Difference between crit damage vs crit chance?

What's the difference between crit chance and crit damage? I see lots of crit chance on wedge, etc, but actually crit damage would seem more valuable but I know there is an actual difference but what ...

Because if the attack doesn't crit, you don't get the modifier from the crit damage.
