A projection wouldn't leave a corpse (or two halves of a corpse), it would disappear. Remember other projections were untouchable. Snoke's corpse was kicked and thrown away. So yes, he's dead, and if Disney resurrects him on episode 9 I won't see another Star Wars movie ever again.
