So, those events which come around and disappear once completed - I'm think Grand Master Yoda, R2-D2, Commander Luke, Grand Admiral Thrawn, BB-8... I'm not sure if they're collectively known as 'legen...

Once you beat them they open up an option for a 3-person co-op raid version. You and three allies get 24 hours to take down the super legendary event - gives gear for that toon (which may be used by others, but that's fine). All three guys get the same gear - no jostling for 1st place.
A lot of other games have mini raids, Legendary events should spawn a legendary co-op mode. (obviously all three players will have needed to unlock it)
