Vader was toying with Obi-Wan the entire time, fighting with only one hand and barely trying. He probably just wants to draw out the moment even more and revel in Obi-Wan's fear and pain and suffering before finally ending him. Besides he already knows where Obi-Wan is now, it shouldn't be that difficult to track him down again
