Luke really isn't that powerful when you consider all the Jedi pre-Order 66. He's had no real Saber training and his force-abilities are a shadow of those we see in the Clone wars. And you're right - he's only fought one other person; Darth Vader, who is at least in his fifties and down 3 limbs.
However, he's also had a long time to train, hunting down and studying old Jedi temples. It's conceivable that in the episode 6-7 interim he picked up a few skills that even Windu and Yoda had not known about.
