You also need that Wedge. The time before him will be much harder than after him.
I also had my time where I was unable to beat Chaze teams, but you grow stronger and with that Sun Fac, it suddenly is easy. So try to avoid these teams.
Today I've fought against a 7* Nihilus (L), EP, Baze, Opress, Maul and it was super easy with Wedge Lead and double tank.
Give it a try. GS is not useless for sure. You need him as a pilot and in GW. I have mine 5* G8 and he will probably stay like this, because I'd rather farm mods. For the Tarkin 5* challenge that was enough and for the zeta challenge he will be in the reserve (reinforcements), so these guys should not be used anyways (need to 3* the challenge)
Also try double tank with your Baze and STH:
Lando (L) / Baze / Boba / Biggs / STH
Maybe try RG + STH, so your attackers are behind the wall.
