They're all good on the team. Hera is the only one you just can't leave out. Sabine is probably the safest one to drop unless you need DPS more than health recovery. And since Sabine is the hardest farm, just leave her for last/later.
In terms of who is good outside a Phoenix team, Ezra, Chopper, and Sabine all work great on Rebel teams or in Chopper's case with other droids. As mentioned earlier, RJT, R2, BB8, Chopper and (GK/Thrawn/ScavRey/K2) make a grrreat team that fires off ID super quick (esp with K2).
