I'm level 83 - finish 1st daily - My Fleet is JC, Boba, Sun Fac, Fives, Kylo (only 4*), Biggs, Ashoka, Genosian Soldier, and FOTP. (I don't use FOTP except for zeta challenge.)
Pilots matter most, so try to re-use ones that you already have geared / starred, or ones that you want to have geared / starred. I use Ackbar as fleet commander. My favorite ships out of that bunch I listed are JC, Boba, Sun Fac, Kylo, and Ashoka. Biggs would probably be better but I only have him G8. If you can get Vader's ship, that's awesome, but I think it will slow you down on your quest for zeta's. I'd wait until you have your zeta fleet ready to go.
This all day. The dark side ships to finish the Tarkin challenge and the light side ships to get the good fleet commanders and into the ability mats challenge. Once you start getting Zetas farming, the rest of the fleet stuff is just to get a little bit more out of the shop or to farm more zetas. There's kind of a conspiracy theory going around about how farming zetas in the ability mat challenge will have a lower drop rate if you also buy them from the fleet store.
True or not, I'd rather have the option to do both, and since I started primarily with light side ships (since I have light side toons, and as stated gear matters the most), I am just starting to catch up....finally!
