I would only farm Sabine if you want the ship. You can run a full Phoenix squad with the other 5 members which is all you need to get Thrawn. Any of the toons that are only available in hard nodes take a lot longer than those farmed literally anywhere else, and you probably don't want to be farming too many of them at once.
I would probably stop farming her once you get enough shards to unlock her and use the energy to get a head start on those FO toons (FOTP/FOST) and gear.
I can't really speak to the best Jedi route to go. I'm a fairly new player as well and I haven't really put much effort into getting my jedi levelled up, nor do I use them in any part of the game. The Yoda event will come back regularly, and I haven't yet seen where I'd use him, so I've put off my jedi thus far.
