Who to target first in a Wiggs team
If you are going up against a Wiggs team, should you try take out Wedge or Biggs first... assuming they have the usual suspects like ST Han, Ani, Lando, etc.

No, this is the wrong answer. You will just continue to fill his TM.
You can go after Wedge first if you want, but if Anakin is on the team he's going to crush you once you start activating his unique. You also do want Lando getting on a roll.
Anakin, Lando and Wedge are priorities, I prefer that order. Biggs can wait for last, can't call an assist if nobody else is there to assist.
