As far as fixing it, I'm not aware of any good options. You can disable Advanced Rendering, although that has some ugly-looking side effects. (Take a look at the second screenshot in the first post.)
Or you can remove the snow cover on the ground through cheats. Bring up the cheats console (cmd-shift-C) and enter "testingcheatsenabled true" without quotes. Then shift-click on the ground and select Seasons > Snow Depth > None. It's not as much fun with no snow on the ground, but at least your screenshots would look okay.
Thanks for all the info! Removing the snow ground cover fixed it for me, but a shame we can't use the snow now. Hopefully an update will come soon.
