Well, to update, the game skipped over my second date due to that Free Will glitch, but recognized the third date. Gave me the memory and everything associated with that event.
So in my test game's scrapbook, I have the "Went on first date" memory for public flirting, "asked out on a date" memory, and "Went on third date" memory.
Also, the two dates that ended with those memories ended when either me or the NPC left the group. From what I can tell, the Dating mechanic is a redressing of the Group feature from Late Night. Once you disband the group, the date ends and the game sends notices on if it was a good date or not.
