How do I unstall the updates so that it will go back to the 1.0.631 version?

Why do you wanna go back to an unpatched games ? Do you not like the features that came later ?
Anyways to answer your question, only way is to uninstall the base game and not patch. You won't be able to install any expansions though and you won't be able to log in or download any Store content.
