I wish we could pull toddlers and older sims on a sled on flat snow terrain as a way to carry them around and for fun of course. Also, when going shopping to be able to carry the shopping on the sled. And yes, I would love more seasonal festival type activities, like Winterfest market, Harvest Fest / Oktoberfest type festival, Flower festival (could include flower arrangement contest, buy and sell flowers and bouquets, bonsai shaping contest, etc). Also some crafting fairs would be nice where you could buy finished products and supplies for crafts, or enter a crafting contest and earn some free supplies. I would also like themed parties at the nightclubs like Spooky party or New Year's party or themed days at restaurants like Love Day, or Winterfest where they serve special menu.
