I totally agree. Given the limitations of the game i think there's nothing much the team can do for visitors beyond adding guidance (with a sim or plaques that'd give us the objects' descriptions thorugh notifications). But i totally see museums being used for careers.
I wish we could be able to make money from presentations there as a painter, instrument player, singer, dancer, etc. exactly how DJ and bar tenders do at nightclubs and saloons. I'd also like to see archeology being better implemented and adding geology too. I even imagined that we could have a Dream Home Decorator gameplay for museologists, organizing expositions. Work there as a security guard would be cool too.
We could also have the ability to choose the type of museum we want to build similar to what we have for community spaces. Setting a museum as an art, techonology or science museum should provide specific gameplay.

I think they could add some museum-specific interactions, like you have at the gym with Lovestruck for example. This could add a bit of interest and it would be great if you could build a tiny bit of skill that way. Then you could have a storyline where a sim visits a museum and gets interested in archaeology, or painting, or even fabrication, for example.
