You actually can lock them out (as well as many other Sims). Just click on a door and choose "Lock for...". The menu is awful and super chaotic, but Ranch Hand is definitely included in the options.
The option that includes a ranch hand, is locking for "Everyone But Ranch Hand"
I have tried everyone But Household Members, but Ranch hand still strolled right on through.
@rhozann - Try Lock for Individual perhaps, and select the Ranch Hand if available on the list.. Or Lock for Everyone, then Allow Access To... Household. I agree that the Lock for Ranch Hand should work as intended and needs fixed if it doesn't. Meanwhile, maybe one of these will serve as a workaround... maybe.
When you choose lock for individual only the household pops up no friends, family or employees outside of the household. My family also has a maid and gardner service that need access to the house and leaving out or including only employees allow the ranch hand inside. Disabling jobs doesn't stop them from doing other things and my outdoors animals (the ones I hired them to care for) are neglected. Ranch hands shouldn't double as maids or repair persons they should just be animal care and/or gardening. Their coding needs to be reworked or the lock doors options need to now separate the services
