I eventually solved my issue, I narrowed it down to a problem with my one specific sim. For anyone who may be having the same issue, I added a new sim to my household, made it exactly the same as my original sim, and deleted the old one. New one works perfectly fine, I just manually overrode the skills and relationships. A lot of annoying repetitive tasks just to be able to have a functioning sim, but that was the only solution that worked.
