Can't make light saber
Not able to make light saber. No option pops up when clicking hilt or crystal.

Move your Mods folder to the Desktop and delete localthumbcache.package. Then test the game.
If it works now check for updates to your Mods and CC. Add it back a little at a time while testing until you have found all that are broken.
Don't know if it's this way for everyone, but I figured out how to get mine to work. I have multiple hilts/crystals and it just says 'your hilt/crystal collection'. I clicked the little... I dunno, layers looking icon in the top right of the crystal collection and it opened a new pane with all of the crystals I had. I could then make a saber.
Edit: I have MCCC installed, if that changes things.
I was only able to do so once I purchased a lightsaber display case.
I can't tell you how many other posts, forums, and videos I looked at to try and figure this out, but that was absolutely the problem I was having, and your answer solved it. Thank you!!
