No, all of your builds will still be there. Just any items that were CC will be removed from them. Furniture, rugs, doors, wallpaper... CLOTHING, HAIR... etc.
They'll all be removed... PERMANENTLY the minute you save with the CC removed. If you have CC clothing and hair, you'll find quite a few of your sims running around naked and bald... Might be best to start a new game after removing it all.
