I tried to create a bundle with the new EP Get Famous but I keep getting the message 'Bundling not available: You're quite the collector...' even though I still have one not purchased EP, one Game Pack and more than a few Stuff Packs that I should be able to create a bundle.

I never encountered this before so I wonder if this is a thing or just a glitch because the EP is new?

merged your post with bundle FAQ. Seems others have issues as well. Not sure what's going on.

  Just contacted EA .
  They said, Get famous is new game, it might not be available in bundle... (they also can not confirm, it is just most likely)

    EA Support are telling everyone different things. One person was told they weren’t going to include it, someone else was told it would be available for bundling in a few days, I was told a few hours. Last release, someone was told Seasons wouldn’t be included and a few hours later it was. It’s very frustrating.
