You don't need to play online—you can put Origin in offline mode any time and then play without the online features.  You can even launch the game while your computer is offline.  Origin will still ask you to sign in, but not having a connection shouldn't be an issue, as long as you haven't cleared Origin's cache since the last time it was online.
