Can't remember how to remove single squares. Something about the hammer tool and control shift or alt or something?
Draw walls around the tile and remove the floor, then remove the walls with the sledgehammer. There is also an option to go to the floor below and put the walls on "full up" the floor will show a yellow border, click on the yellow and "remove ceiling".

Hi. Thanks for the response. The flooring was removed after I put walls around them, but when I took the walls away the flooring came back. I removed the wall with the sledgehammer first then tried using the wall tool and alt to take it down. Both times the flooring came back. 😢

gives a good guide. This might be out of date with the current build. Maybe a dev could appear and say it's being fixed! :)

Also, you can click on floor and when you see the arrows. Click on one of the arrows and pull it towards the stairs that should close it. I've done this several; times.
