Does the sims 4 legacy edition delete previous gameplay?

No, the Legacy Edition doesn't delete your existing saves, builds, etc. But you may have two game folders in Documents\Electronic Arts, one labeled The Sims 4 (from when you played up until now), and one labeled The Sims 4 Legacy Edition (created when you installed the Legacy Edition and launched it for the first time). In that case, you could copy the contents of your Saves and Tray folders from the TS4 folder to the TS4 LE folder, and they should then appear in your game.
